20 Minute Cabbage Recipe

The last two weeks the market has been full, full, full of cabbage. Truthfully it is not a vegetable I normally buy nor think about but I’ve been putting variations of it in the boxes the past few weeks. After a trip to Miami a few weeks ago, I found myself thinking about my favorite meal there. There’s this amazing Peruvian restaurant Maty’s that served a big chunk of oven roasted charred cabbage smothered in chili- divine. Last week I decided to literally slice it up into big burger sized rounds and roast it with salt, pepper, olive oil, and red chili pepper flakes- and although it didn’t hold a candle to Maty’s it was pretty delicious. So- cut your cabbage into slices or straight down the middle, toss or rub with olive oil, whatever spices your heart desires, and roast at 400 F for about 20 minutes or until soft. Give it whirl when you’re wondering what to do with your cabbage!
